Banana Bread
(Sugar Free & Vegan)

1 cup pitted dates (soaked in hot water for 20 mins)
4 ripe bananas
2 apples 
1/4 cup coconut oil
2 tsp vanilla extract
2 cups wholemeal spelt flour
1 1/4 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt

Preheat oven to 180 degrees
Line a loaf tin with baking paper

Cut the apples into cubes
Steam until soft

Drain and place the dates in a food processor
Add steamed apples, bananas, coconut oil & vanilla extract
Blend until smooth

In a separate bowl whisk dry ingredients together
Add smooth blended mixture and mix with a wooden spoon
(Be careful not to overmix)

Pour batter into loaf tin
Bake for 45 - 55 mins
(Until knife inserted in middle comes out clean)

Cool for 20 mins then transfer to cooling rack
