Tomato Pasta Sauce 

This is a great recipe to make in bulk and freeze. 
You can use this sauce as a base for other dishes such as: 
-Curries
-Mince Bolognaise
-Lentil / Butter Bean Bolognaise
-Pizza 
This is my favourite veggie smuggler dish and my family love it. 

Ingredients:
1 bunch mixed herbs
3 cloves garlic
1 large brown onion
2 carrots
1 zucchini
1/2 red capsicum
8 ripe tomatoes
3 tbsp tomato paste
Salt & Pepper
2 tbsp vegetable stock
Handful of sunflower seeds (Optional) 
Olive oil

Method:
1. Chop herbs, onion and garlic
2. Heat olive oil in a large pot and saute herbs, onion and garlic
3. Blend fresh tomatoes and add to pot
3. Blend carrots, zucchini and capsicum and add to pot
4. Add all other ingredients
6. Bring to the boil then simmer for 30 mins (or longer for a richer flavour)
7. Option to add it back into the blender to make it a less textured sauce
8. Add sunflower seeds into the blender for a creamy look
9. Mix through cooked pasta
